valentine’s heart sandwich cookies

Happy Valentine’s Day! I had plans in my head to do more Valentine’s recipes/posts… but that didn’t exactly work out. Last night I made Jake some special treats for today (which I will post about later because I don’t want him to see what I made) and with the leftover cookie dough I made these:

Mini heart sandwich cookies! They are sugar cookies with lemon cream filling. They are pretty tiny and just the right bite for a little something sweet.

I have had problems in the past with rolled out cookie dough. Either I roll it out too thin (or too thick) or the dough sticks to the cookie cookies or breaks on the way to the tray. But I used a recipe from Bake at 350 that promised “perfect” cookies… and I have to say the dough was really easy to work with AND you don’t have to chill it first which is really what made it awesome to me. You can tint these whatever color you want, obviously, or leave them untinted. They are filled with basically my favorite buttercream doctored up with lemon zest and lemon juice.
