“calzone” pita bread and mini naan pizzas with bonsavor flatbreads

Flatbreads, naan, pita breads, tortillas and more arrived at my doorstep in a big old box not too long ago. One look at it made me think, “Oh god, will I be able to use all of this before it goes bad? What am I going to make?!” I took a bunch of it over to Jake’s so his family could partake in the goodness from BonSavor. And then… something strange happened. The stars, the moon, the planets and the sun all aligned and Jake volunteered to cook and to make something with the flatbreads!

Jake has cooked instead of me maybe a handful times in our whole five year relationship. Once he made sloppy joe with ground pork and well… let’s just say that I still rib him about it from time to time.

Funny thing is that he was the first one of us to cook for the other. He made me a chicken dinner and I remember being impressed that he wanted to cook for me in the first place. I had never had a boy cook for me before!


The other funny thing? The first thing I ever made for him was some awful pasta salad and I absolutely hated it. Was embarrassed by it. Was convinced he only ate it to make me feel better. I had never made the recipe before and the flavors came out all weird.

To this day he still insists that it was good. Bless him.

Imagine my surprise then when Jake not only wanted to cook but he didn’t want my help at all.

He was getting all serious on me. It was so cute!

He got the idea to use the pita bread as like an open faced “calzone”. He wanted to do something else with the naan, but at the last minute decided to use them to make mini pizzas since he couldn’t think of anything else. No problem with me!

Jake made his own from scratch sauce and made little meatballs. He did a few variations – one with just cheese and meatballs (ricotta and mozzarella), one with both cheeses, sauce and meatballs, and one without ricotta.

My favorite of the three was the one with all of the ingredients – sauce, ricotta, mozzarella and delicious little meatballs.

The naan made a really great base for the little pizzas – the crisped up nice on the bottom and held together very well. Jake’s sauce also turned out really good – he didn’t tell me what was in it exactly, but I liked it better than what he’s made in the past (which usually  involved way too much of those spaghetti seasoning packages). The meatballs were also really good and all together it made for a lovely little pizza.

This one didn’t turn out exactly as he had hoped, but I thought it was a great try and it tasted pretty good, too.

The one of the left is stuffed with sauce, cheeses and the meatballs while the one on the right didn’t get the sauce love. Most calzones do not have tomato sauce inside of them (rather, served on the side more like a dipping sauce) so this one was more like the originals.

Jake’s biggest concern was all of the “stuff” falling out while it cooked in the oven. He had some leftover pita that had broken and wasn’t usable so he used those pieces to prop up the calzone.

He baked these for 10 minutes or less since he was really only melting cheese. They look a little extra crispy but that was only on the very very edge.

Of the two, I liked the sauce one better thought the cheesy one was good, too. You could still dip it!

The pita bread stood up well to heat and had a nice flavor. Not the usual way to use pita bread, but it held up!

Of the two I kind of preferred the mini naan pizza, if only because it was slightly easier to eat…

Jake seemed pretty proud of his one man food production and I was proud that he did it all by himself and that all I had to do was sit on my butt and watch TV.

I wonder if I can get this to become a regular kind of thing…

  1. Great job Jake!
    Suggest you make a slit in the top of the pita bread and stuff with goodies. That way the stuffing should stay inside.
