nutter butter bites – bridal shower favors

More bridal shower stuff – it’ll be over soon!

The other thing we made were the favors (among other things). For favors we decided to create a “Friends and Family Cookbook” along with some “Nutter Butter Bites” – two lovely things to take home! I had the guests that were coming to the shower send me a few of their favorite recipes and created it into a little booklet that I printed out at home. The only thing I didn’t really think about was that printing it out would make the recipes be in no sensible order, but I decided I didn’t care. No reason to be totally perfect when no one will really notice, right?

Laura and I spent one evening making the Nutter Butter Bites (which I found over on Bakerella) which were totally easy to make and did not take us oodles of time to make, even though they look all fancy and pretty.

We didn’t really roll everything to be the same size (our mistake), but that was okay. We used white chocolate with some blue food coloring to drizzle over the top to keep with the “blue” theme for the bridal shower. We just used forks to roll them around in the chocolate, which as you can see, made little pools of chocolate at the bottom. You can buy a dipping spoon at a cake decorating shop or craft store if you are looking for better looking chocolate bites. We figured a little extra chocolate on the top won’t have anyone complaining.

Nutter Butter Bites

1 pkg. Nutter Butter cookies (crushed & broken… use whole cookies with the cream center)
1 8oz. package cream cheese (softened)
1 package chocolate chips (I used Guittard Milk Chocolate Chips)

White chocolate chips
Blue food coloring

1. Finely crush all but 5 cookies in a food processor or in a plastic bag + rolling pin = crush! method. Eat the five remaining cookies while you work to resist eating the nutter butter bites while you work.
2. Combine with cream cheese. Use the back of a large spoon to help mash the two together.
3. Roll the mixture into 1″ balls and place on wax paper covered cookie sheet.
4. Melt chocolate (I pour them into a bowl and heat it in the microwave for 30 second intervals until its completely melted – usually takes 1 to 1 1/2 minutes to melt) and then dip balls into chocolate, tap off extra and set aside on wax paper covered cookie sheet to dry.
5. To speed up drying time, stick them in a refrigerator. Takes a few minutes to dry (10-15 minutes or so).
6. Melt white chocolate and add food coloring. Drizzle over dried chocolate and place back in the fridge to firm up. Yum!
